Guinness Beef Stew

Ingredients
- Bacon, cut into thin strips, crosswise
- Chuck Roast, or other stew type cut, cut in 1 ½” cubes
- Salt and pepper
- Tomato Paste
- Onion, 1" dice
- Guinness Stout, or other favorite microbrew
- Chef’s Companion, Brown Gravy, Prepared
- Oil
- Garlic, minced
- Cabbage, cut into 1" squares
- Mushrooms, quartered
- Potatoes, diced 1"
- Carrots, diced 1” (Or oblique cut)
- Parsnip or Turnip, diced 1”
- Bay Leaf
- Thyme, fresh or 1 Tablespoon dry, chopped

Instructions

1:In a large pan over medium heat, brown bacon and remove

2:Season Diced Beef with salt and pepper and sear in bacon fat about 8 minutes - may need to add a little oil. Do not over crowd! May need to do in 2 batches. Remove beef.

3:Add onion and tomato paste and cook until onion starts to brown about 10 minutes. Do not burn! Add Garlic.

4:Deglaze with Guinness and scrape up all the brown bits.

5:Add back beef, and Chef’s Companion Brown Gravy, bring to boil, and down to simmer. Put lid on and cook on low 1 hour.

6:Add vegetables and herbs and cook covered another 30 minutes to 1 hour until beef in fork tender.

7:Remove bay leaf, and serve in bowl. Season To Taste and garnish with fresh chopped parsley if desired.
