  • Marrakesh Express® Fiesta Rice
  • Chicken Broth. Reduced or low sodium
  • Canned diced tomatoes with green chilies
  • Chicken breast, cooked, cubed
  • Whole kernel corn, canned or frozen
  • Black beans, canned, rinsed
  • Enchilada Sauce, mild
  • Salt
  • True Lime
  • Avocado, Sour Cream, Cilantro, Shredded Cheese

Instructions

  • 1:
    Prepare Fiesta rice as directed, set aside.
  • 2:
    Heat chicken broth, tomatoes, and enchilada sauce in a stockpot to a boil.
  • 3:
    Add chicken, corn, black beans, salt and rice to pot. Reduce heat simmer for 5-10 minutes.
  • 4:
    Stir in True Lime. Keep warm.
  • 5:
    For each serving, garnish with tortilla chips, avocado, sour cream, cilantro, and cheese.
